Ingredients

  • Firm tofu - 200 grams
  • Broccoli florets - 100 grams
  • Bell pepper (red or yellow) - 1 medium, sliced
  • Carrot - 1 medium, julienned
  • Snap peas - 100 grams
  • Garlic - 2 cloves, minced
  • Fresh ginger - 1 teaspoon, grated
  • Soy sauce - 2 tablespoons
  • Sesame oil - 1 tablespoon
  • Olive oil - 1 tablespoon
  • Cornstarch - 1 tablespoon
  • Sesame seeds - 1 tablespoon (for garnish)
  • Green onions - 2, chopped (for garnish)

Steps

  1. Press the tofu for about 10 minutes to remove excess moisture, then cut it into 1-inch cubes.
  2. Toss the tofu cubes in cornstarch until evenly coated.
  3. Heat olive oil in a large non-stick skillet or wok over medium-high heat. Add the tofu and cook until golden brown and crispy, about 8-10 minutes, stirring occasionally. Remove the tofu and set aside.
  4. In the same skillet, add broccoli, bell pepper, carrot, and snap peas. Stir-fry for about 5-7 minutes until the vegetables are tender-crisp.
  5. Add the minced garlic and grated ginger to the vegetables, stir-frying for an additional 1-2 minutes until fragrant.
  6. Return the crispy tofu to the skillet and pour in the soy sauce and sesame oil. Toss everything together for another 2-3 minutes to combine and heat through.
  7. Remove from heat and garnish with sesame seeds and chopped green onions before serving.
