- Red bell pepper - 1 medium, diced
- Cucumber - 1 medium, diced
- Cherry tomatoes - 150 grams, halved
- Carrot - 1 medium, grated
- Green onion - 2 stalks, chopped
- Olive oil - 2 tablespoons
- Lemon juice - 1 tablespoon
- Salt - 1/2 teaspoon
- Black pepper - 1/4 teaspoon
- Fresh parsley - 2 tablespoons, chopped
- Pumpkin seeds - 30 grams
Steps
- Rinse the quinoa under cold water to remove any bitterness, then combine it with 250 ml of water in a pot.
- Bring the water to a boil, then reduce the heat to low, cover, and let it simmer for about 15 minutes or until the quinoa is fluffy and the water is absorbed.
- While the quinoa is cooking, prepare the vegetables by dicing the red bell pepper, cucumber, and halving the cherry tomatoes. Grate the carrot and chop the green onion.
- In a large bowl, combine the cooked quinoa with the diced vegetables, grated carrot, and chopped green onion.
- In a small bowl, whisk together the olive oil, lemon juice, salt, and black pepper to create a dressing.
- Pour the dressing over the quinoa and vegetables, and toss everything together until well combined.
- Finally, sprinkle the chopped parsley and pumpkin seeds on top for added crunch and flavor before serving.
