  • Cherry tomatoes - 150 grams, halved
  • Carrot - 1 medium, grated
  • Green onion - 2 stalks, chopped
  • Olive oil - 2 tablespoons
  • Lemon juice - 1 tablespoon
  • Salt - 1/2 teaspoon
  • Black pepper - 1/4 teaspoon
  • Fresh parsley - 2 tablespoons, chopped
  • Pumpkin seeds - 30 grams

Steps

  1. Rinse the quinoa under cold water to remove any bitterness, then combine it with 250 ml of water in a pot.
  2. Bring the water to a boil, then reduce the heat to low, cover, and let it simmer for about 15 minutes or until the quinoa is fluffy and the water is absorbed.
