Ingredients

  • Firm tofu - 300 grams
  • Soy sauce - 2 tablespoons
  • Rice vinegar - 1 tablespoon
  • Maple syrup - 1 tablespoon
  • Cornstarch - 2 tablespoons
  • Vegetable oil - 1/4 cup (for frying)
  • Baguette - 1 large (or 2 small)
  • Cucumber - 1/2, thinly sliced
  • Carrot - 1 medium, julienned
  • Radishes - 4, thinly sliced
  • Fresh cilantro - 1/4 cup, chopped
  • Sriracha - 1 tablespoon
  • Mayonnaise - 2 tablespoons
  • Lime juice - 1 tablespoon
  • Salt - to taste

Steps

  1. Press the tofu for 15-20 minutes to remove excess moisture, then cut it into 1 cm thick slices.
  2. In a bowl, mix soy sauce, rice vinegar, and maple syrup. Marinate the tofu slices in this mixture for at least 10 minutes.
  3. After marinating, coat the tofu slices with cornstarch evenly on both sides.
  4. Heat vegetable oil in a frying pan over medium heat. Fry the tofu slices for about 3-4 minutes on each side until crispy and golden brown. Remove and drain on paper towels.
  5. In a small bowl, mix mayonnaise, lime juice, and a pinch of salt to create a zesty sauce.
  6. Slice the baguette lengthwise, and spread the zesty mayo mixture on both sides.
  7. Layer the crispy tofu, cucumber slices, julienned carrot, radish slices, and fresh cilantro inside the baguette.
  8. Drizzle with sriracha for an extra kick, then close the sandwich and slice it in half to serve.
