Ingredients

  • Firm tofu - 200 grams
  • Corn tortillas - 4 pieces
  • Olive oil - 2 tablespoons
  • Red bell pepper - 1 medium, sliced
  • Zucchini - 1 medium, sliced
  • Red onion - 1 small, sliced
  • Garlic powder - 1 teaspoon
  • Smoked paprika - 1 teaspoon
  • Cumin - 1/2 teaspoon
  • Salt - 1/2 teaspoon
  • Black pepper - 1/4 teaspoon
  • Fresh cilantro - 2 tablespoons, chopped
  • Lime - 1, cut into wedges

Steps

  1. Preheat your oven to 200°C (400°F).
  2. Press the tofu for about 15 minutes to remove excess moisture, then cut it into 1 cm cubes.
  3. In a bowl, toss the tofu cubes with 1 tablespoon of olive oil, garlic powder, smoked paprika, cumin, salt, and black pepper until evenly coated.
  4. Spread the tofu cubes on a baking sheet lined with parchment paper and bake for 20 minutes, flipping halfway through until golden and crispy.
  5. While the tofu is baking, heat the remaining tablespoon of olive oil in a skillet over medium heat.
  6. Add the sliced red bell pepper, zucchini, and red onion to the skillet and sauté for 5-7 minutes until the vegetables are tender but still crisp.
  7. Warm the corn tortillas in a dry skillet or microwave until pliable.
  8. Assemble the tacos by placing crispy tofu and sautéed vegetables on each tortilla, and garnish with fresh cilantro.
  9. Serve with lime wedges on the side for squeezing over the tacos.
