Ingredients

  • Sweet potato - 300 grams
  • Canned chickpeas - 240 grams (drained and rinsed)
  • Olive oil - 3 tablespoons
  • Paprika - 1 teaspoon
  • Garlic powder - 1 teaspoon
  • Salt - 1/2 teaspoon
  • Black pepper - 1/4 teaspoon
  • Mixed salad greens - 100 grams
  • Cherry tomatoes - 100 grams (halved)
  • Avocado - 1 medium (sliced)
  • Balsamic vinegar - 1 tablespoon
  • Fresh parsley - 2 tablespoons (chopped)

Steps

  1. Preheat the oven to 200°C (400°F).
  2. Peel and dice the sweet potato into 1 cm cubes.
  3. In a bowl, toss the sweet potato cubes with 1 tablespoon of olive oil, paprika, garlic powder, salt, and black pepper until well coated.
  4. Spread the sweet potatoes on a baking sheet and roast in the oven for 20 minutes, or until tender and crispy, stirring halfway through.
  5. While the sweet potatoes are roasting, prepare the chickpeas by tossing them with the remaining 2 tablespoons of olive oil, salt, and pepper.
  6. After 10 minutes of roasting the sweet potatoes, add the chickpeas to the baking sheet and roast for an additional 10 minutes until both are crispy.
  7. In a large bowl, combine the mixed salad greens, cherry tomatoes, and sliced avocado.
  8. Once the sweet potatoes and chickpeas are done, add them to the salad bowl.
  9. Drizzle with balsamic vinegar, sprinkle with fresh parsley, and gently toss to combine.
