- Sweet potato - 300 grams
- Canned chickpeas - 240 grams (drained and rinsed)

- Paprika - 1 teaspoon
- Garlic powder - 1 teaspoon

- Black pepper - 1/4 teaspoon
- Mixed salad greens - 100 grams
- Cherry tomatoes - 100 grams (halved)
- Avocado - 1 medium (sliced)
- Balsamic vinegar - 1 tablespoon
- Fresh parsley - 2 tablespoons (chopped)
Steps
- Preheat the oven to 200°C (400°F).
- Peel and dice the sweet potato into 1 cm cubes.
- In a bowl, toss the sweet potato cubes with 1 tablespoon of olive oil, paprika, garlic powder, salt, and black pepper until well coated.
- Spread the sweet potatoes on a baking sheet and roast in the oven for 20 minutes, or until tender and crispy, stirring halfway through.

- After 10 minutes of roasting the sweet potatoes, add the chickpeas to the baking sheet and roast for an additional 10 minutes until both are crispy.
- In a large bowl, combine the mixed salad greens, cherry tomatoes, and sliced avocado.
- Once the sweet potatoes and chickpeas are done, add them to the salad bowl.
- Drizzle with balsamic vinegar, sprinkle with fresh parsley, and gently toss to combine.
