Ingredients
- Quinoa - 1 cup
- Water - 2 cups
- Egg - 1 large
- Cheddar cheese, shredded - 1/2 cup
- Green onion, chopped - 1/4 cup
- Garlic powder - 1 teaspoon
- Cumin - 1/2 teaspoon
- Salt - 1/2 teaspoon
- Black pepper - 1/4 teaspoon
- Olive oil - 2 tablespoons
- Breadcrumbs - 1/2 cup
Steps
- Rinse the quinoa under cold water, then combine it with 2 cups of water in a pot. Bring to a boil, reduce to a simmer, cover, and cook for about 15 minutes until the quinoa is fluffy and water is absorbed.
- Preheat your oven to 200°C (400°F) and line a baking sheet with parchment paper.
- In a large bowl, combine the cooked quinoa, egg, cheddar cheese, green onion, garlic powder, cumin, salt, and black pepper. Mix well until all ingredients are combined.
- Form the mixture into small bite-sized balls or patties and place them on the prepared baking sheet.
- Sprinkle breadcrumbs over the top of each quinoa bite to create a crispy coating. Drizzle olive oil over the bites.
