Ingredients

  • Quinoa - 1 cup
  • Water - 2 cups
  • Egg - 1 large
  • Cheddar cheese, shredded - 1/2 cup
  • Green onion, chopped - 1/4 cup
  • Garlic powder - 1 teaspoon
  • Cumin - 1/2 teaspoon
  • Salt - 1/2 teaspoon
  • Black pepper - 1/4 teaspoon
  • Olive oil - 2 tablespoons
  • Breadcrumbs - 1/2 cup

Steps

  1. Rinse the quinoa under cold water, then combine it with 2 cups of water in a pot. Bring to a boil, reduce to a simmer, cover, and cook for about 15 minutes until the quinoa is fluffy and water is absorbed.
  2. Preheat your oven to 200°C (400°F) and line a baking sheet with parchment paper.
  3. In a large bowl, combine the cooked quinoa, egg, cheddar cheese, green onion, garlic powder, cumin, salt, and black pepper. Mix well until all ingredients are combined.
  4. Form the mixture into small bite-sized balls or patties and place them on the prepared baking sheet.
