- 2 large russet potatoes
- 2 tablespoons olive oil
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- 1/2 teaspoon smoked paprika
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1/2 cup shredded cheddar cheese
- 2 tablespoons sour cream
- 2 tablespoons chopped green onions
Steps
- Preheat your oven to 200°C (400°F).
- Wash and scrub the russet potatoes thoroughly. Pat them dry with a towel.
- Prick each potato several times with a fork to allow steam to escape during baking.
- Bake the potatoes directly on the oven rack for about 30-35 minutes, or until they are tender when pierced with a knife.
- Remove the potatoes from the oven and let them cool for about 10 minutes until they are manageable to handle.
- Slice each potato in half lengthwise and carefully scoop out the flesh, leaving about 0.5 cm of potato on the skins.
- Brush the insides of the potato skins with olive oil and season them with garlic powder, onion powder, smoked paprika, salt, and black pepper.
- Place the potato skins on a baking sheet, cut side up, and bake for an additional 10-15 minutes until they are crispy.
- Remove from the oven and sprinkle shredded cheddar cheese into each potato skin.
- Return to the oven for another 5 minutes, or until the cheese is melted and bubbly.
- Serve the crispy potato skins hot, topped with sour cream and chopped green onions.
