Ingredients

  • 2 large russet potatoes
  • 2 tablespoons olive oil
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1/2 teaspoon smoked paprika
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/2 cup shredded cheddar cheese
  • 2 tablespoons sour cream
  • 2 tablespoons chopped green onions

Steps

  1. Preheat your oven to 200°C (400°F).
  2. Wash and scrub the russet potatoes thoroughly. Pat them dry with a towel.
  3. Prick each potato several times with a fork to allow steam to escape during baking.
  4. Bake the potatoes directly on the oven rack for about 30-35 minutes, or until they are tender when pierced with a knife.
  5. Remove the potatoes from the oven and let them cool for about 10 minutes until they are manageable to handle.
  6. Slice each potato in half lengthwise and carefully scoop out the flesh, leaving about 0.5 cm of potato on the skins.
  7. Brush the insides of the potato skins with olive oil and season them with garlic powder, onion powder, smoked paprika, salt, and black pepper.
  8. Place the potato skins on a baking sheet, cut side up, and bake for an additional 10-15 minutes until they are crispy.
  9. Remove from the oven and sprinkle shredded cheddar cheese into each potato skin.
  10. Return to the oven for another 5 minutes, or until the cheese is melted and bubbly.
  11. Serve the crispy potato skins hot, topped with sour cream and chopped green onions.
