Ingredients
- Russet potatoes - 2 medium (about 500 grams)
- Onion - 1 small (about 100 grams)
- All-purpose flour - 3 tablespoons (45 grams)
- Egg - 1 large
- Salt - 1 teaspoon (5 grams)
- Black pepper - 1/2 teaspoon (2 grams)
- Olive oil - 1/4 cup (60 ml)
- Sour cream - for serving (optional)
- Applesauce - for serving (optional)
Steps
- Peel the russet potatoes and grate them using a box grater or food processor. Place the grated potatoes in a clean kitchen towel and squeeze out excess moisture.
- Peel and finely chop the onion, then combine it with the grated potatoes in a mixing bowl.
- Add the flour, egg, salt, and black pepper to the bowl, mixing until everything is well combined.
- In a large skillet, heat 2 tablespoons of olive oil over medium heat. Once hot, scoop about a 1/4 cup of the potato mixture and flatten it slightly in the skillet to form a pancake.
- Cook each pancake for about 4-5 minutes on each side, or until golden brown and crispy, adding more oil as needed.
- Remove the pancakes from the skillet and place them on a paper towel to absorb excess oil. Repeat the process with the remaining mixture.
- Serve hot with sour cream and applesauce if desired.
