- 2 medium russet potatoes - 400 grams
- 1 small onion - 100 grams
- 1 large egg - 50 grams
- 2 tablespoons all-purpose flour - 15 grams
- 1 teaspoon salt - 5 grams
- 1/4 teaspoon black pepper - 1 gram
- 1/4 teaspoon baking powder - 1 gram
- Oil for frying - 1/2 cup (120 ml)
Steps
- Peel the potatoes and onion, then coarsely grate them using a box grater or food processor.
- Place the grated potatoes and onion in a clean kitchen towel or cheesecloth, and squeeze out as much excess moisture as possible.
- In a mixing bowl, combine the grated potatoes and onion with the egg, flour, salt, black pepper, and baking powder. Mix until well combined.
- Heat oil in a large skillet over medium-high heat until shimmering.
- Scoop about 2 tablespoons of the potato mixture and form it into a patty, then carefully place it in the hot oil. Repeat with remaining mixture, making sure not to overcrowd the pan.
- Fry the latkes for about 4-5 minutes on each side until they are golden brown and crispy. Adjust the heat as necessary to prevent burning.
- Once cooked, transfer the latkes to a paper towel-lined plate to drain excess oil.
- Serve warm with applesauce or sour cream on the side.
