- Vegetable broth - 4 cups (960 ml)
- Olive oil - 2 tablespoons (30 ml)
- Nutritional yeast - 2 tablespoons (30 g)
- Garlic powder - 1 teaspoon (5 g)
- Onion powder - 1 teaspoon (5 g)
- Salt - 1 teaspoon (5 g)
- Black pepper - 1/2 teaspoon (2 g)
- Cornstarch - 2 tablespoons (15 g)
Steps
- In a large saucepan, bring the vegetable broth to a boil.
- Slowly whisk in the polenta, stirring continuously to avoid lumps.
- Reduce the heat to low and cook the polenta, stirring frequently, for about 15 minutes until thickened.
- Remove from heat and stir in olive oil, nutritional yeast, garlic powder, onion powder, salt, and black pepper.
- Pour the polenta into a greased baking dish, spreading it out evenly, and let it cool for at least 30 minutes or until set.
- Preheat the oven to 220°C (425°F).
- Once set, cut the polenta into fry-shaped pieces.
- Toss the polenta fries with cornstarch to coat evenly.
- Arrange the fries on a baking sheet lined with parchment paper and brush lightly with olive oil.
- Bake in the preheated oven for 25-30 minutes, flipping halfway through, until golden and crispy.
