Ingredients

  • Polenta - 1 cup (240 ml)
  • Vegetable broth - 4 cups (960 ml)
  • Olive oil - 2 tablespoons (30 ml)
  • Nutritional yeast - 2 tablespoons (30 g)
  • Garlic powder - 1 teaspoon (5 g)
  • Onion powder - 1 teaspoon (5 g)
  • Salt - 1 teaspoon (5 g)
  • Black pepper - 1/2 teaspoon (2 g)
  • Cornstarch - 2 tablespoons (15 g)

Steps

  1. In a large saucepan, bring the vegetable broth to a boil.
  2. Slowly whisk in the polenta, stirring continuously to avoid lumps.
  3. Reduce the heat to low and cook the polenta, stirring frequently, for about 15 minutes until thickened.
  4. Remove from heat and stir in olive oil, nutritional yeast, garlic powder, onion powder, salt, and black pepper.
  5. Pour the polenta into a greased baking dish, spreading it out evenly, and let it cool for at least 30 minutes or until set.
  6. Preheat the oven to 220°C (425°F).
  7. Once set, cut the polenta into fry-shaped pieces.
  8. Toss the polenta fries with cornstarch to coat evenly.
  9. Arrange the fries on a baking sheet lined with parchment paper and brush lightly with olive oil.
  10. Bake in the preheated oven for 25-30 minutes, flipping halfway through, until golden and crispy.
