Ingredients

  • Polenta - 1 cup (240 ml)
  • Water - 4 cups (960 ml)
  • Salt - 1 teaspoon (5 g)
  • Olive oil - 2 tablespoons (30 ml)
  • Parmesan cheese - 1/2 cup (50 g), grated
  • Black pepper - 1/2 teaspoon (2 g)
  • Garlic powder - 1/2 teaspoon (2 g)
  • Cornmeal - for dusting
  • Fresh herbs (like parsley or basil) - for garnish

Steps

  1. In a large saucepan, bring 4 cups of water to a boil and add 1 teaspoon of salt.
  2. Gradually whisk in the polenta, stirring continuously to prevent lumps.
  3. Reduce heat to low and cook, stirring frequently, for about 20 minutes, until thickened.
  4. Remove from heat and stir in the grated Parmesan cheese, black pepper, and garlic powder until well combined.
  5. Pour the polenta into a greased 9x9 inch (23x23 cm) square dish, spreading it evenly. Let it cool for at least 15 minutes until set.
  6. Once set, cut the polenta into bite-sized squares. Dredge each square lightly in cornmeal.
  7. In a skillet, heat 2 tablespoons of olive oil over medium heat. Add the polenta bites in batches, frying until golden and crispy, about 3-4 minutes per side.
  8. Remove from the skillet and place on paper towels to drain excess oil. Garnish with fresh herbs before serving.
