- Salt - 1 teaspoon (5 g)
- Olive oil - 2 tablespoons (30 ml)
- Parmesan cheese - 1/2 cup (50 g), grated
- Black pepper - 1/2 teaspoon (2 g)
- Garlic powder - 1/2 teaspoon (2 g)
- Cornmeal - for dusting
- Fresh herbs (like parsley or basil) - for garnish
Steps
- In a large saucepan, bring 4 cups of water to a boil and add 1 teaspoon of salt.
- Gradually whisk in the polenta, stirring continuously to prevent lumps.
- Reduce heat to low and cook, stirring frequently, for about 20 minutes, until thickened.
- Remove from heat and stir in the grated Parmesan cheese, black pepper, and garlic powder until well combined.
- Pour the polenta into a greased 9x9 inch (23x23 cm) square dish, spreading it evenly. Let it cool for at least 15 minutes until set.
- Once set, cut the polenta into bite-sized squares. Dredge each square lightly in cornmeal.
- In a skillet, heat 2 tablespoons of olive oil over medium heat. Add the polenta bites in batches, frying until golden and crispy, about 3-4 minutes per side.
- Remove from the skillet and place on paper towels to drain excess oil. Garnish with fresh herbs before serving.
