  • Parmesan cheese, grated - 1/4 cup (25 g)
  • Fresh herbs (such as rosemary or thyme) - 1 tablespoon, chopped

Steps

  1. In a medium saucepan, bring the vegetable broth to a boil.
  2. Gradually whisk in the polenta, stirring continuously to prevent lumps.
  3. Add salt and simmer on low heat for about 20 minutes, stirring frequently until thickened.
  4. Remove from heat and stir in the grated Parmesan cheese and fresh herbs.
  5. Spread the polenta mixture into a greased 8-inch square baking dish, smoothing the top evenly.
  6. Let the polenta cool completely at room temperature for about 10 minutes, then refrigerate for at least 30 minutes until firm.
