- Green or brown lentils - 1 cup (200g)
- Vegetable broth - 2 cups (480ml)
- Olive oil - 2 tablespoons (30ml)
- Taco seasoning - 2 tablespoons (30g)
- Corn tortillas - 4 small (about 6 inches each)
- Lettuce - 1 cup, shredded (about 30g)
- Tomato - 1 medium, diced (about 150g)
- Avocado - 1 medium, sliced (about 150g)
- Fresh cilantro - 1/4 cup, chopped (about 15g)
- Lime - 1, cut into wedges
Steps
- Rinse the lentils under cold water and drain them.
- In a medium saucepan, combine the lentils and vegetable broth. Bring to a boil, then reduce the heat and simmer for 20 minutes, or until lentils are tender.
- Drain any excess liquid from the lentils and return them to the saucepan.
- Add olive oil and taco seasoning to the lentils, stirring well to combine. Cook on medium heat for an additional 5 minutes, stirring occasionally, until heated through.
- While the lentils are cooking, warm the corn tortillas in a dry skillet over medium heat for about 30 seconds on each side, until pliable.
- To assemble the tacos, place a generous spoonful of the lentil mixture onto each tortilla.
- Top with shredded lettuce, diced tomato, sliced avocado, and chopped cilantro.
- Serve with lime wedges on the side for an extra burst of flavor.
