Ingredients

  • Green or brown lentils - 1 cup (200g)
  • Vegetable broth - 2 cups (480ml)
  • Olive oil - 2 tablespoons (30ml)
  • Taco seasoning - 2 tablespoons (30g)
  • Corn tortillas - 4 small (about 6 inches each)
  • Lettuce - 1 cup, shredded (about 30g)
  • Tomato - 1 medium, diced (about 150g)
  • Avocado - 1 medium, sliced (about 150g)
  • Fresh cilantro - 1/4 cup, chopped (about 15g)
  • Lime - 1, cut into wedges

Steps

  1. Rinse the lentils under cold water and drain them.
  2. In a medium saucepan, combine the lentils and vegetable broth. Bring to a boil, then reduce the heat and simmer for 20 minutes, or until lentils are tender.
  3. Drain any excess liquid from the lentils and return them to the saucepan.
  4. Add olive oil and taco seasoning to the lentils, stirring well to combine. Cook on medium heat for an additional 5 minutes, stirring occasionally, until heated through.
  5. While the lentils are cooking, warm the corn tortillas in a dry skillet over medium heat for about 30 seconds on each side, until pliable.
  6. To assemble the tacos, place a generous spoonful of the lentil mixture onto each tortilla.
  7. Top with shredded lettuce, diced tomato, sliced avocado, and chopped cilantro.
  8. Serve with lime wedges on the side for an extra burst of flavor.
