  • Egg - 1 large
  • Milk - 1/4 cup (60ml)
  • Salt - 1 teaspoon (5g)
  • Black pepper - 1/2 teaspoon (2g)
  • Paprika - 1/2 teaspoon (2g)
  • Cayenne pepper - 1/4 teaspoon (1g)
  • Vegetable oil - for frying (about 1 cup or 240ml)

Steps

  1. Slice the green tomatoes into 1/4 inch thick slices and set aside.
  2. In a shallow bowl, combine the flour, salt, black pepper, paprika, and cayenne pepper.
  3. In another bowl, whisk together the egg and milk until well combined.
  4. Place the cornmeal in a third shallow dish.
  5. Dredge each tomato slice first in the flour mixture, shaking off any excess.
  6. Dip the floured tomato slice into the egg mixture, allowing any excess to drip off.
  7. Coat the tomato slice in cornmeal, pressing gently to ensure it adheres well. Repeat with all slices.
  8. In a large skillet, heat the vegetable oil over medium-high heat until hot but not smoking.
  9. Fry the coated tomato slices in batches, cooking for about 3-4 minutes on each side or until golden brown and crispy.
  10. Remove the fried tomatoes and place them on a paper towel-lined plate to drain excess oil.
