Steps
- Slice the green tomatoes into 1/4 inch thick slices and set aside.
- In a shallow bowl, combine the flour, salt, black pepper, paprika, and cayenne pepper.
- In another bowl, whisk together the egg and milk until well combined.
- Place the cornmeal in a third shallow dish.
- Dredge each tomato slice first in the flour mixture, shaking off any excess.
- Dip the floured tomato slice into the egg mixture, allowing any excess to drip off.
- Coat the tomato slice in cornmeal, pressing gently to ensure it adheres well. Repeat with all slices.
- In a large skillet, heat the vegetable oil over medium-high heat until hot but not smoking.
