Ingredients

  • Crappie fillets - 300 grams
  • Almond flour - 1 cup (100 grams)
  • Coconut flour - 2 tablespoons (30 grams)
  • Garlic powder - 1 teaspoon
  • Onion powder - 1 teaspoon
  • Paprika - 1 teaspoon
  • Black pepper - 1/2 teaspoon
  • Sea salt - 1 teaspoon
  • Eggs - 2 large
  • Coconut oil - 1/2 cup (120 ml) for frying
  • Lemon wedges - for serving

Steps

  1. Rinse the crappie fillets under cold water and pat them dry with paper towels.
  2. In a shallow bowl, combine almond flour, coconut flour, garlic powder, onion powder, paprika, black pepper, and sea salt.
  3. In another bowl, beat the eggs until well combined.
  4. Dip each crappie fillet first into the beaten eggs, allowing excess to drip off, then coat thoroughly in the flour mixture, pressing gently to adhere the coating.
  5. In a large skillet, heat coconut oil over medium-high heat until shimmering.
  6. Carefully place the coated crappie fillets in the hot oil, frying in batches if necessary to avoid overcrowding.
  7. Fry for about 3-4 minutes on each side, or until golden brown and crispy.
  8. Remove the fried crappie from the skillet and place on a paper towel-lined plate to drain excess oil.
  9. Serve hot with lemon wedges on the side.
