Ingredients
- Chicken thighs - 500 grams
- Buttermilk - 240 ml
- All-purpose flour - 150 grams
- Cornstarch - 50 grams
- Paprika - 1 teaspoon
- Garlic powder - 1 teaspoon
- Onion powder - 1 teaspoon
- Salt - 1 teaspoon
- Black pepper - 1/2 teaspoon
- Cayenne pepper - 1/2 teaspoon
- Baking powder - 1/2 teaspoon
- Vegetable oil - for frying
Steps
- In a bowl, combine the buttermilk, paprika, garlic powder, onion powder, salt, black pepper, and cayenne pepper. Add the chicken thighs and ensure they are well-coated. Cover and refrigerate for at least 1 hour, or overnight for best results.
- In a separate bowl, mix the all-purpose flour, cornstarch, baking powder, and a pinch of salt. This will be the dredging mixture.
- Heat vegetable oil in a deep skillet or frying pot over medium-high heat until it reaches 180°C (350°F).
- Remove the chicken from the buttermilk marinade, letting any excess drip off. Dredge each piece in the flour mixture, ensuring they are well-coated. Shake off the excess flour.
- Carefully place the coated chicken into the hot oil, frying in batches to avoid overcrowding. Fry for about 6-8 minutes on each side or until golden brown and cooked through (internal temperature should reach 75°C or 165°F).
- Once cooked, transfer the chicken to a paper towel-lined plate to drain any excess oil. Serve hot with your favorite BBQ sides.
