Ingredients

  • White fish fillets (like cod or haddock) - 300 grams
  • Whole wheat breadcrumbs - 50 grams
  • Almond flour - 30 grams
  • Egg - 1 large
  • Lemon juice - 1 tablespoon
  • Garlic powder - 1 teaspoon
  • Paprika - 1 teaspoon
  • Salt - 1/2 teaspoon
  • Black pepper - 1/4 teaspoon
  • Olive oil - 2 tablespoons
  • Fresh parsley (for garnish) - 1 tablespoon

Steps

  1. Preheat the oven to 200°C (400°F) and line a baking sheet with parchment paper.
  2. Cut the fish fillets into bite-sized pieces, about 3-4 cm each.
  3. In a shallow bowl, whisk the egg with lemon juice, garlic powder, paprika, salt, and black pepper.
  4. In another bowl, combine the whole wheat breadcrumbs and almond flour.
  5. Dip each fish piece into the egg mixture, allowing excess to drip off, then coat thoroughly in the breadcrumb mixture.
  6. Place the coated fish bites on the prepared baking sheet, ensuring they are spaced apart.
  7. Drizzle olive oil over the fish bites to help them crisp up while baking.
  8. Bake in the preheated oven for 15-20 minutes, or until golden and crispy, flipping halfway through.
  9. Once done, remove from the oven and let them cool for a few minutes before garnishing with fresh parsley.
  10. Serve warm with a slice of lemon or your favorite dipping sauce.
