Steps
- Preheat the oven to 220°C (430°F).
- Slice the zucchini into thin strips to resemble fries and place them in a bowl.
- Drizzle 1 tablespoon of olive oil over the zucchini, season with salt and pepper, and toss to coat evenly.
- Spread the zucchini fries on a baking sheet lined with parchment paper and bake for 15-20 minutes, flipping halfway through, until golden and crispy.
- In a shallow bowl, whisk the egg until well beaten.
- In another bowl, combine the almond flour, grated Parmesan cheese, garlic powder, paprika, salt, and black pepper.
- Dip each fish fillet first into the beaten egg, allowing excess to drip off, then coat thoroughly with the almond flour mixture.
- Heat the remaining tablespoon of olive oil in a large skillet over medium heat.
- Add the coated fish fillets to the skillet and cook for about 4-5 minutes on each side, or until golden brown and cooked through.
- Remove the fish from the skillet and drain on paper towels.
