Ingredients

  • Chickpeas - 200 grams (soaked overnight)
  • Garlic - 2 cloves, minced
  • Onion - 1 small, chopped
  • Fresh parsley - 30 grams, chopped
  • Fresh cilantro - 30 grams, chopped
  • Ground cumin - 1 teaspoon
  • Ground coriander - 1 teaspoon
  • Baking powder - 1 teaspoon
  • Salt - 1 teaspoon
  • Black pepper - 1/2 teaspoon
  • All-purpose flour - 2 tablespoons
  • Vegetable oil - for frying
  • Whole wheat burger buns - 2
  • Lettuce - 2 leaves
  • Tomato - 1, sliced
  • Cucumber - 1, sliced
  • Tahini sauce - for drizzling

Steps

  1. In a food processor, combine soaked chickpeas, garlic, onion, parsley, cilantro, cumin, coriander, baking powder, salt, and pepper. Pulse until a coarse mixture forms.
  2. Transfer the mixture to a bowl and stir in the flour until combined. If the mixture is too wet, add a bit more flour.
  3. Shape the mixture into patties (about 2.5 inches in diameter) and place them on a plate.
  4. Heat vegetable oil in a deep skillet over medium heat. Once hot, carefully add the patties, frying in batches for about 3-4 minutes per side, or until golden brown and crispy.
  5. Remove the patties and place them on paper towels to drain excess oil.
  6. Toast the whole wheat buns lightly in the same skillet or in a toaster.
  7. Assemble the burgers by placing a lettuce leaf on the bottom bun, followed by a crispy falafel patty, sliced tomato, sliced cucumber, and a drizzle of tahini sauce. Top with the other half of the bun.
