- 1 medium eggplant - 300 grams
- 2 tablespoons olive oil - 30 ml
- 1 teaspoon garlic powder - 5 grams
- 1 teaspoon paprika - 5 grams
- 1/2 teaspoon salt - 2.5 grams
- 1/4 teaspoon black pepper - 1.25 grams
- 1/4 teaspoon cayenne pepper (optional) - 1.25 grams
- 2 tablespoons grated Parmesan cheese (optional) - 15 grams
Steps
- Preheat the oven to 200°C (400°F) and line a baking sheet with parchment paper.
- Slice the eggplant into thin rounds, about 3-5 mm thick, and place them in a colander.
- Sprinkle the eggplant slices with salt and let them sit for 15 minutes to draw out excess moisture.
- Rinse the eggplant slices under cold water and pat them dry with paper towels.
- In a mixing bowl, combine olive oil, garlic powder, paprika, black pepper, and cayenne pepper (if using).
- Add the dried eggplant slices to the bowl and toss them until evenly coated with the oil and spice mixture.
- Arrange the eggplant slices in a single layer on the prepared baking sheet, making sure they do not overlap.
- Bake in the preheated oven for 20-25 minutes or until the chips are golden and crispy, flipping them halfway through the baking time.
- Remove from the oven and, if desired, sprinkle with grated Parmesan cheese while still warm.
