Ingredients

  • chickpeas - 1 can (400g), drained and rinsed
  • olive oil - 2 tablespoons
  • paprika - 1 teaspoon
  • cumin - 1 teaspoon
  • salt - 1/2 teaspoon
  • black pepper - 1/4 teaspoon
  • romaine lettuce - 2 cups, chopped
  • cherry tomatoes - 1 cup, halved
  • cucumber - 1 medium, diced
  • red onion - 1/4, thinly sliced
  • feta cheese - 50g, crumbled
  • lemon juice - 1 tablespoon
  • fresh parsley - 2 tablespoons, chopped

Steps

  1. Preheat the oven to 200°C (400°F).
  2. In a bowl, toss the drained chickpeas with olive oil, paprika, cumin, salt, and black pepper until well coated.
  3. Spread the seasoned chickpeas on a baking sheet in a single layer and roast for 20-25 minutes, or until crispy, shaking the pan halfway through.
  4. While the chickpeas are roasting, prepare the salad by combining the chopped romaine lettuce, cherry tomatoes, cucumber, and red onion in a large mixing bowl.
