Ingredients

  • Canned chickpeas - 1 can (400g), drained and rinsed
  • All-purpose flour - 1/4 cup (30g)
  • Fresh parsley - 1/4 cup, chopped
  • Garlic powder - 1 teaspoon
  • Cumin - 1/2 teaspoon
  • Paprika - 1/2 teaspoon
  • Salt - 1/2 teaspoon
  • Black pepper - 1/4 teaspoon
  • Baking powder - 1/2 teaspoon
  • Olive oil - 3 tablespoons for frying

Steps

  1. In a mixing bowl, mash the drained chickpeas with a fork or potato masher until mostly smooth, leaving some chunks for texture.
  2. Add the all-purpose flour, chopped parsley, garlic powder, cumin, paprika, salt, black pepper, and baking powder to the mashed chickpeas. Mix until well combined.
  3. Form the mixture into small patties, about 2 inches in diameter, and place them on a plate.
  4. Heat olive oil in a large skillet over medium heat. Once hot, add the fritters in batches, making sure not to overcrowd the pan.
  5. Fry the fritters for about 4-5 minutes on each side, or until golden brown and crispy.
  6. Remove the fritters from the skillet and place them on a paper towel-lined plate to absorb excess oil. Repeat with remaining fritters.
