Ingredients

  • 2 boneless, skinless chicken breasts - 400g
  • 1 cup almond flour - 100g
  • 1/2 cup grated Parmesan cheese - 50g
  • 1 teaspoon garlic powder - 5g
  • 1 teaspoon dried Italian herbs - 5g
  • 1/2 teaspoon salt - 3g
  • 1/4 teaspoon black pepper - 1g
  • 2 large eggs - 100g
  • 1/2 cup sugar-free marinara sauce - 120g
  • 1 cup shredded mozzarella cheese - 100g
  • 2 tablespoons olive oil - 30ml
  • Fresh basil leaves for garnish - optional

Steps

  1. Preheat your oven to 200°C (400°F).
  2. In a shallow dish, mix the almond flour, grated Parmesan, garlic powder, Italian herbs, salt, and pepper.
  3. In another bowl, beat the eggs until well combined.
  4. Pound the chicken breasts to an even thickness of about 1.5 cm for even cooking.
  5. Dip each chicken breast into the beaten eggs, allowing excess to drip off, then coat thoroughly with the almond flour mixture.
  6. Heat olive oil in a large oven-safe skillet over medium-high heat. Once hot, add the coated chicken breasts and cook for 3-4 minutes on each side until golden brown.
  7. Remove the skillet from heat and spoon the sugar-free marinara sauce evenly over each chicken breast.
  8. Sprinkle the shredded mozzarella cheese on top of the sauce.
  9. Transfer the skillet to the preheated oven and bake for 10-12 minutes, or until the cheese is melted and bubbly and the chicken is cooked through (internal temperature of 75°C or 165°F).
  10. Remove from the oven, garnish with fresh basil leaves if desired, and serve hot.
