- 2 boneless, skinless chicken breasts - 400g
- 1 cup almond flour - 100g
- 1/2 cup grated Parmesan cheese - 50g
- 1 teaspoon garlic powder - 5g
- 1 teaspoon dried Italian herbs - 5g
- 1/2 teaspoon salt - 3g
- 1/4 teaspoon black pepper - 1g
- 2 large eggs - 100g
- 1/2 cup sugar-free marinara sauce - 120g
- 1 cup shredded mozzarella cheese - 100g
- 2 tablespoons olive oil - 30ml
- Fresh basil leaves for garnish - optional
Steps
- Preheat your oven to 200°C (400°F).
- In a shallow dish, mix the almond flour, grated Parmesan, garlic powder, Italian herbs, salt, and pepper.
- In another bowl, beat the eggs until well combined.
- Pound the chicken breasts to an even thickness of about 1.5 cm for even cooking.
- Dip each chicken breast into the beaten eggs, allowing excess to drip off, then coat thoroughly with the almond flour mixture.
- Heat olive oil in a large oven-safe skillet over medium-high heat. Once hot, add the coated chicken breasts and cook for 3-4 minutes on each side until golden brown.
- Remove the skillet from heat and spoon the sugar-free marinara sauce evenly over each chicken breast.
- Sprinkle the shredded mozzarella cheese on top of the sauce.
- Transfer the skillet to the preheated oven and bake for 10-12 minutes, or until the cheese is melted and bubbly and the chicken is cooked through (internal temperature of 75°C or 165°F).
- Remove from the oven, garnish with fresh basil leaves if desired, and serve hot.
