- Chicken breast - 300 grams, diced
- Bell pepper (red) - 1 medium, sliced
- Broccoli florets - 150 grams
- Zucchini - 1 medium, sliced
- Carrot - 1 medium, julienned
- Soy sauce (low sodium) - 3 tablespoons
- Sesame oil - 1 tablespoon
- Garlic - 2 cloves, minced
- Ginger - 1 teaspoon, grated
- Olive oil - 2 tablespoons
- Cornstarch - 1 tablespoon
- Salt - to taste
- Black pepper - to taste
- Green onions - 2, chopped (for garnish)
Steps
- In a medium bowl, combine diced chicken, cornstarch, salt, and black pepper. Mix well and let it marinate for 10 minutes.
- Heat 1 tablespoon of olive oil in a large skillet or wok over medium-high heat. Add the marinated chicken and cook until golden brown and crispy, about 5-7 minutes. Remove the chicken from the skillet and set aside.
- In the same skillet, add another tablespoon of olive oil. Add minced garlic and grated ginger, and sauté for 30 seconds until fragrant.
