Ingredients

  • Chicken breast - 300 grams, diced
  • Bell pepper (red) - 1 medium, sliced
  • Broccoli florets - 150 grams
  • Zucchini - 1 medium, sliced
  • Carrot - 1 medium, julienned
  • Soy sauce (low sodium) - 3 tablespoons
  • Sesame oil - 1 tablespoon
  • Garlic - 2 cloves, minced
  • Ginger - 1 teaspoon, grated
  • Olive oil - 2 tablespoons
  • Cornstarch - 1 tablespoon
  • Salt - to taste
  • Black pepper - to taste
  • Green onions - 2, chopped (for garnish)

Steps

  1. In a medium bowl, combine diced chicken, cornstarch, salt, and black pepper. Mix well and let it marinate for 10 minutes.
  2. Heat 1 tablespoon of olive oil in a large skillet or wok over medium-high heat. Add the marinated chicken and cook until golden brown and crispy, about 5-7 minutes. Remove the chicken from the skillet and set aside.
