- Chicken breast - 300 grams
- Quinoa - 150 grams
- Olive oil - 2 tablespoons
- Garlic powder - 1 teaspoon
- Paprika - 1 teaspoon
- Salt - 1/2 teaspoon

- Vegetable broth - 400 ml
- Cherry tomatoes - 150 grams, halved
- Cucumber - 1 medium, diced
- Red onion - 1/4 medium, finely chopped
- Fresh parsley - 2 tablespoons, chopped
- Lemon juice - 1 tablespoon
Steps
- Preheat the oven to 200°C (400°F).
- In a mixing bowl, combine the chicken breast, 1 tablespoon of olive oil, garlic powder, paprika, salt, and black pepper. Mix well to coat the chicken evenly.
- Place the seasoned chicken on a baking sheet lined with parchment paper and bake for 20-25 minutes or until the chicken is cooked through and crispy on the outside.
- While the chicken is baking, rinse the quinoa under cold water. In a saucepan, combine quinoa and vegetable broth. Bring to a boil, then reduce heat to low, cover, and simmer for 15 minutes or until quinoa is fluffy and liquid is absorbed.
- In a large bowl, combine the cooked quinoa, cherry tomatoes, cucumber, red onion, and parsley. Drizzle with remaining olive oil and lemon juice, then toss to combine.
- Once the chicken is done, remove it from the oven and let it rest for a few minutes before slicing.
- To serve, divide the quinoa mixture between two bowls, top with sliced crispy chicken, and enjoy.
