Ingredients

  • Chicken breast - 300 grams
  • Quinoa - 150 grams
  • Olive oil - 2 tablespoons
  • Garlic powder - 1 teaspoon
  • Paprika - 1 teaspoon
  • Salt - 1/2 teaspoon
  • Black pepper - 1/2 teaspoon
  • Vegetable broth - 400 ml
  • Cherry tomatoes - 150 grams, halved
  • Cucumber - 1 medium, diced
  • Red onion - 1/4 medium, finely chopped
  • Fresh parsley - 2 tablespoons, chopped
  • Lemon juice - 1 tablespoon

Steps

  1. Preheat the oven to 200°C (400°F).
  2. In a mixing bowl, combine the chicken breast, 1 tablespoon of olive oil, garlic powder, paprika, salt, and black pepper. Mix well to coat the chicken evenly.
  3. Place the seasoned chicken on a baking sheet lined with parchment paper and bake for 20-25 minutes or until the chicken is cooked through and crispy on the outside.
  4. While the chicken is baking, rinse the quinoa under cold water. In a saucepan, combine quinoa and vegetable broth. Bring to a boil, then reduce heat to low, cover, and simmer for 15 minutes or until quinoa is fluffy and liquid is absorbed.
