- Parmesan cheese, grated - 50 grams
- Paprika - 1 teaspoon
- Garlic powder - 1 teaspoon
- Onion powder - 1 teaspoon
- Salt - 1 teaspoon
- Black pepper - 1/2 teaspoon
- Eggs - 2 large
- Sugar-free BBQ sauce - 100 grams
- Olive oil - 2 tablespoons
Steps
- Preheat the oven to 200°C (400°F).
- In a shallow bowl, mix almond flour, grated Parmesan cheese, paprika, garlic powder, onion powder, salt, and black pepper.
- In another bowl, beat the two eggs until well combined.
- Dip each chicken thigh into the egg mixture, allowing excess to drip off, then coat with the almond flour mixture, pressing gently to adhere.
- Heat olive oil in a large oven-safe skillet over medium heat. Once hot, add the coated chicken thighs and cook for about 3-4 minutes on each side until golden brown.
- Brush the tops of the chicken thighs with sugar-free BBQ sauce, then transfer the skillet to the preheated oven.
- Bake for 20-25 minutes or until the chicken is cooked through and reaches an internal temperature of 75°C (165°F).
