Ingredients

  • Chicken thighs - 400 grams
  • Almond flour - 100 grams
  • Parmesan cheese, grated - 50 grams
  • Paprika - 1 teaspoon
  • Garlic powder - 1 teaspoon
  • Onion powder - 1 teaspoon
  • Salt - 1 teaspoon
  • Black pepper - 1/2 teaspoon
  • Eggs - 2 large
  • Sugar-free BBQ sauce - 100 grams
  • Olive oil - 2 tablespoons

Steps

  1. Preheat the oven to 200°C (400°F).
  2. In a shallow bowl, mix almond flour, grated Parmesan cheese, paprika, garlic powder, onion powder, salt, and black pepper.
  3. In another bowl, beat the two eggs until well combined.
  4. Dip each chicken thigh into the egg mixture, allowing excess to drip off, then coat with the almond flour mixture, pressing gently to adhere.
  5. Heat olive oil in a large oven-safe skillet over medium heat. Once hot, add the coated chicken thighs and cook for about 3-4 minutes on each side until golden brown.
  6. Brush the tops of the chicken thighs with sugar-free BBQ sauce, then transfer the skillet to the preheated oven.
  7. Bake for 20-25 minutes or until the chicken is cooked through and reaches an internal temperature of 75°C (165°F).
  8. Remove from the oven and let rest for a few minutes before serving, garnishing with additional BBQ sauce if desired.
