Ingredients

  • Zucchini - 2 medium-sized
  • Almond flour - 1/2 cup
  • Parmesan cheese (grated) - 1/4 cup
  • Garlic powder - 1 teaspoon
  • Onion powder - 1 teaspoon
  • Dried oregano - 1 teaspoon
  • Paprika - 1/2 teaspoon
  • Salt - 1/2 teaspoon
  • Black pepper - 1/4 teaspoon
  • Egg - 1 large
  • Olive oil spray - as needed

Steps

  1. Preheat the oven to 220°C (425°F) and line a baking sheet with parchment paper.
  2. Wash and trim the zucchini, then cut them into fry-shaped sticks, approximately 1 cm wide.
  3. In a shallow bowl, combine almond flour, Parmesan cheese, garlic powder, onion powder, oregano, paprika, salt, and black pepper.
  4. In another bowl, beat the egg until well mixed.
  5. Dip each zucchini stick into the egg, allowing excess to drip off, then coat it in the almond flour mixture, pressing lightly to adhere.
  6. Place the coated zucchini fries on the prepared baking sheet in a single layer.
  7. Spray the tops of the fries lightly with olive oil to help them crisp up.
  8. Bake in the preheated oven for 20-25 minutes, flipping halfway through until golden brown and crispy.
  9. Remove from the oven and let cool for a few minutes before serving.
