- Chickpeas - 240 grams (1 can, drained and rinsed)
- Fresh parsley - 30 grams (1 cup, chopped)
- Fresh cilantro - 30 grams (1 cup, chopped)
- Garlic - 2 cloves, minced
- Cumin - 1 teaspoon
- Coriander - 1 teaspoon
- Baking powder - 1 teaspoon
- Olive oil - 2 tablespoons
- Salt - 1/2 teaspoon
- Black pepper - 1/4 teaspoon
- Whole wheat flour - 30 grams (1/4 cup)
- Lemon juice - 1 tablespoon
Steps
- Preheat the oven to 200°C (400°F) and line a baking sheet with parchment paper.
- In a food processor, combine the drained chickpeas, parsley, cilantro, garlic, cumin, coriander, baking powder, olive oil, salt, pepper, flour, and lemon juice.
- Pulse the mixture until it is well combined but still slightly chunky. Do not over-process.
- Using your hands, form the mixture into small balls or patties, about 2.5 cm in diameter.
- Place the formed falafel on the prepared baking sheet and lightly brush or spray them with olive oil.
- Bake in the preheated oven for 20-25 minutes, flipping halfway through, until golden brown and crispy.
- Remove from the oven and let cool slightly before serving.
