- Eggplant - 1 medium (about 250g)
- Olive oil - 2 tablespoons
- Salt - 1 teaspoon
- Black pepper - 1/2 teaspoon
- Paprika - 1/2 teaspoon
- Garlic powder - 1/2 teaspoon
- Cooked lentils - 1 cup (240g)
- Canned chickpeas - 1 cup (240g), drained and rinsed
- Fresh spinach - 2 cups (60g), chopped
- Onion - 1 small, diced
- Cumin - 1/2 teaspoon
- Lemon juice - 1 tablespoon
- Feta cheese - 50g, crumbled (optional)
Steps
- Preheat the oven to 200°C (400°F).
- Slice the eggplant into 1 cm thick rounds and place them on a baking sheet lined with parchment paper.
- Brush both sides of the eggplant slices with olive oil and sprinkle with salt, black pepper, paprika, and garlic powder.
- Bake the eggplant slices in the preheated oven for 25-30 minutes, flipping halfway through, until they are golden and crispy.
- While the eggplant is baking, heat a tablespoon of olive oil in a skillet over medium heat.
- Add the diced onion and sauté until translucent, about 5 minutes.
- Stir in the cooked lentils, chickpeas, chopped spinach, cumin, and lemon juice. Cook for another 5 minutes until the spinach is wilted and everything is heated through.
- Once the eggplant is done, serve the crispy slices topped with the lentil, spinach, and chickpea mixture, and sprinkle with feta cheese if using.
