- Eggplant - 1 medium
- Olive oil - 2 tablespoons
- Salt - 1 teaspoon
- Black pepper - 1/2 teaspoon
- Garlic powder - 1 teaspoon
- Paprika - 1 teaspoon
- Canned chickpeas - 1 cup, drained and rinsed
- Cooked lentils - 1 cup
- Fresh spinach - 2 cups, chopped
- Onion - 1 small, diced
- Cumin - 1/2 teaspoon
- Lemon juice - 1 tablespoon
- Fresh parsley - 2 tablespoons, chopped
Steps
- Preheat the oven to 200°C (400°F).
- Slice the eggplant into 1 cm rounds and arrange them on a baking sheet.
- Drizzle the eggplant rounds with 1 tablespoon of olive oil and sprinkle with salt, black pepper, garlic powder, and paprika. Toss to coat evenly.
- Bake the eggplant in the preheated oven for 20-25 minutes, turning halfway through, until crispy and golden.
- While the eggplant is baking, heat the remaining tablespoon of olive oil in a skillet over medium heat. Add the diced onion and sauté until translucent, about 3-4 minutes.
- Stir in the chopped spinach and cook until wilted, about 2-3 minutes.
- Add the cooked lentils and chickpeas to the skillet, followed by cumin and lemon juice. Mix well and cook for an additional 2-3 minutes until heated through.
- Once the eggplant is done, remove it from the oven and serve topped with the lentil, spinach, and chickpea mixture.
- Garnish with fresh parsley before serving.
