Ingredients

  • 1 medium eggplant - sliced into 1 cm rounds
  • 1 cup cooked lentils - drained
  • 1 cup fresh spinach - chopped
  • 1/2 cup canned chickpeas - rinsed and drained
  • 2 tablespoons olive oil
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1/2 teaspoon smoked paprika
  • Salt and pepper to taste
  • 1/4 cup breadcrumbs (optional for extra crispiness)
  • 2 tablespoons grated Parmesan cheese (optional)

Steps

  1. Preheat the oven to 220°C (425°F).
  2. Slice the eggplant into 1 cm rounds and sprinkle both sides with salt. Let them sit for about 15 minutes to draw out moisture.
  3. Rinse the eggplant slices under cold water and pat them dry with a paper towel.
  4. In a large bowl, combine the cooked lentils, chopped spinach, chickpeas, olive oil, garlic powder, onion powder, smoked paprika, salt, and pepper. Mix well.
  5. On a baking sheet, arrange the eggplant slices in a single layer. Brush both sides lightly with olive oil or spray with cooking spray.
  6. If using, sprinkle breadcrumbs and Parmesan cheese on top of the eggplant slices for added crunch.
  7. Bake in the preheated oven for 25-30 minutes, flipping halfway through, until the eggplant is golden brown and crispy.
  8. Remove from the oven and serve the crispy eggplant topped with the lentil-spinach-chickpea mixture.
