  • Grated Parmesan cheese - 1/4 cup
  • Garlic powder - 1 teaspoon

  • Paprika - 1/2 teaspoon
  • Salt - 1/2 teaspoon
  • Black pepper - 1/4 teaspoon
  • Fresh parsley - 1 tablespoon (chopped, for garnish)

Steps

  1. Preheat your oven to 220°C (425°F) and line a baking sheet with parchment paper.
  2. Wash and slice the eggplant into fries, about 1 cm thick, and set aside.
  3. In a large bowl, combine the panko breadcrumbs, grated Parmesan cheese, garlic powder, onion powder, paprika, salt, and black pepper.
  4. In another bowl, drizzle the eggplant fries with olive oil, tossing to coat evenly.
  5. Take each oil-coated eggplant fry and dip it into the breadcrumb mixture, ensuring it is fully coated.
  6. Place the coated eggplant fries on the prepared baking sheet in a single layer.
  7. Bake in the preheated oven for 20-25 minutes, until golden and crispy, flipping them halfway through for even cooking.
  8. Once done, remove from the oven and let cool for a couple of minutes before garnishing with chopped parsley.
  9. Serve immediately with your favorite dipping sauce.
