Ingredients

  • Shrimp (peeled and deveined) - 300 grams
  • Grits - 1 cup (240 ml)
  • Water - 4 cups (960 ml)
  • Heavy cream - 1/2 cup (120 ml)
  • Sharp cheddar cheese (grated) - 1/2 cup (60 grams)
  • Butter - 2 tablespoons (30 grams)
  • Olive oil - 1 tablespoon (15 ml)
  • Garlic (minced) - 2 cloves
  • Green bell pepper (diced) - 1/2
  • Celery (diced) - 1/2 stalk
  • Onion (diced) - 1/2
  • Creole seasoning - 2 teaspoons
  • Tabasco sauce - 1 teaspoon
  • Salt - to taste
  • Black pepper - to taste
  • Green onions (sliced, for garnish) - 2 tablespoons

Steps

  1. In a medium saucepan, bring 4 cups of water to a boil. Slowly whisk in the grits, reduce the heat to low, and cook for about 20 minutes, stirring occasionally until thickened.
  2. In the last 5 minutes of cooking the grits, stir in the heavy cream, grated cheddar cheese, and 1 tablespoon of butter. Season with salt and pepper to taste.
  3. While the grits are cooking, heat olive oil in a skillet over medium heat. Add the diced onion, green bell pepper, and celery, and sauté until softened, about 5 minutes.
  4. Add the minced garlic and sauté for an additional minute until fragrant. Stir in the Creole seasoning, shrimp, and Tabasco sauce, cooking until the shrimp are pink and cooked through, about 4-5 minutes.
  5. Remove the skillet from heat and stir in the remaining tablespoon of butter to create a glossy sauce. Adjust seasoning with salt and pepper as desired.
  6. To serve, spoon the cheesy grits onto plates, top with the Creole shrimp mixture, and garnish with sliced green onions.
