Steps
- 1. In a large pot, heat the olive oil over medium heat. Add the sliced Andouille sausage and cook until browned, about 5 minutes.
- 2. Add the diced chicken breast to the pot and cook until no longer pink, about 5 minutes.
- 3. Stir in the diced onion, bell pepper, and celery, cooking until they soften, about 5 minutes.
- 4. Add the minced garlic and cook for an additional minute until fragrant.
- 5. Pour in the diced tomatoes and chicken broth, and bring the mixture to a simmer.
- 6. Stir in the sliced okra, Cajun seasoning, bay leaf, thyme, salt, and black pepper. Reduce heat to low and simmer for 20 minutes, stirring occasionally.
- 7. Add the peeled shrimp and cook until they turn pink and opaque, about 5 minutes.
- 8. Remove the bay leaf before serving. Ladle the gumbo into bowls and garnish with chopped green onions.
