- Fresh sage - 2 tablespoons, chopped
- Black pepper - 1/4 teaspoon
- Parmesan cheese (optional, for garnish) - 2 tablespoons, grated
Steps
- In a mixing bowl, combine almond flour and Himalayan salt, then create a well in the center.
- Add the eggs and olive oil into the well and mix until a dough forms. If too sticky, add a little more almond flour.
- Knead the dough for about 2-3 minutes until smooth, then wrap it in plastic wrap and let it rest for 10 minutes.
- Roll out the dough on a floured surface until it's about 1/8 inch thick, then cut into fettuccine strips.
- Bring a large pot of salted water to a boil and cook the fettuccine for 3-4 minutes until they float to the surface. Drain and set aside.
- In a skillet, heat the olive oil over medium heat and add the minced garlic. Sauté for 1 minute until fragrant.
- Stir in the maple syrup and chopped sage, cooking for another 2 minutes to combine flavors.
- Add the cooked fettuccine to the skillet, tossing to coat in the maple sauce. Season with black pepper to taste.
- Serve immediately, garnished with grated Parmesan cheese if desired.
