- 2 chicken breasts - 400 grams
- 1 tablespoon olive oil - 15 ml
- 1 teaspoon Italian seasoning - 5 grams
- Salt - to taste
- Black pepper - to taste
- 2 cloves garlic - minced
- 100 ml heavy cream
- 50 grams cream cheese - softened
- 100 grams fresh spinach
- 50 grams sun-dried tomatoes - chopped
- 30 grams grated Parmesan cheese
- 1 tablespoon fresh basil - chopped (for garnish)
Steps
- Heat the olive oil in a large skillet over medium heat.
- Season the chicken breasts with Italian seasoning, salt, and black pepper on both sides.
- Add the chicken to the skillet and cook for about 6-7 minutes per side until golden brown and cooked through. Remove the chicken from the skillet and set aside.
- In the same skillet, add minced garlic and sauté for about 30 seconds until fragrant.
- Pour in the heavy cream and add the cream cheese, stirring until the cream cheese is melted and the sauce is smooth.
- Add the spinach and sun-dried tomatoes, cooking until the spinach is wilted.
- Stir in the grated Parmesan cheese and let the sauce simmer for a couple of minutes until slightly thickened.
- Return the chicken to the skillet, spoon the sauce over it, and cook for an additional 2-3 minutes to heat through.
- Garnish with fresh basil before serving.
