Ingredients

  • Potatoes - 400 grams, peeled and diced
  • Carrot - 1 medium, diced
  • Onion - 1 small, diced
  • Garlic - 2 cloves, minced
  • Vegetable broth - 500 ml
  • Heavy cream - 100 ml
  • Olive oil - 1 tablespoon
  • Salt - 1 teaspoon
  • Black pepper - 1/2 teaspoon
  • Fresh chives - 2 tablespoons, chopped (for garnish)

Steps

  1. In a large pot, heat the olive oil over medium heat. Add the diced onion and carrot, sautéing until softened, about 5 minutes.
  2. Stir in the minced garlic and cook for an additional minute until fragrant.
  3. Add the diced potatoes and vegetable broth to the pot. Bring to a boil, then reduce heat and simmer for 15-20 minutes, or until the potatoes are tender.
  4. Using an immersion blender, blend the soup until smooth. If a blender is used, allow the soup to cool slightly before blending in batches.
  5. Stir in the heavy cream, salt, and black pepper. Heat through for another 5 minutes without boiling.
  6. Serve hot, garnished with chopped chives.
