- Garlic - 2 cloves, minced
- Mushrooms (cremini or button) - 300 grams, sliced
- Thyme - 1 teaspoon, fresh or dried
- Vegetable broth - 500 ml
- Coconut milk - 200 ml
- Salt - to taste
- Black pepper - to taste
- Fresh parsley - for garnish
Steps
- In a medium pot, heat the olive oil over medium heat. Add the chopped shallots and sauté for about 3-4 minutes until they become translucent.
- Add the minced garlic and sliced mushrooms to the pot. Cook for another 5-7 minutes, stirring occasionally, until the mushrooms are tender and have released their moisture.
- Stir in the thyme, then pour in the vegetable broth. Bring the mixture to a boil, then reduce the heat and let it simmer for about 10 minutes.
- Use an immersion blender to puree the soup until smooth, or transfer it to a blender in batches if you don't have an immersion blender.
- Return the pureed soup to the pot and stir in the coconut milk. Heat through for an additional 5 minutes, and season with salt and black pepper to taste.
- Serve hot, garnished with fresh parsley.
