Ingredients

  • 2 chicken breasts - 400 grams
  • 200 grams of mushrooms (cremini or button) - sliced
  • 1 cup heavy cream - 240 ml
  • 1/2 cup shredded mozzarella cheese - 60 grams
  • 2 tablespoons olive oil - 30 ml
  • 2 cloves garlic - minced
  • 1 teaspoon dried thyme - 1 gram
  • 1 teaspoon paprika - 2 grams
  • Salt - to taste
  • Pepper - to taste
  • Fresh parsley - for garnish

Steps

  1. Preheat your oven to 200°C (400°F).
  2. In a skillet, heat the olive oil over medium heat. Season the chicken breasts with salt, pepper, and paprika on both sides.
  3. Add the chicken breasts to the skillet and cook for about 5 minutes on each side until golden brown. Remove the chicken from the skillet and set aside.
  4. In the same skillet, add the minced garlic and sliced mushrooms. Sauté for about 5-7 minutes until the mushrooms are browned and tender.
  5. Pour in the heavy cream and add the dried thyme, stirring to combine. Let it simmer for 2-3 minutes until slightly thickened.
  6. Stir in the shredded mozzarella cheese until melted and well combined.
  7. Return the chicken breasts to the skillet, spooning the mushroom cream sauce over them.
  8. Transfer the skillet to the preheated oven and bake for 15 minutes, or until the chicken is cooked through and the sauce is bubbly.
  9. Remove from the oven, garnish with fresh parsley, and serve hot.
