- Walnuts, chopped - 1/2 cup
- Dried cranberries - 1/2 cup
- Honey or maple syrup - 1/4 cup
- Coconut oil, melted - 2 tablespoons
- Cinnamon - 1 teaspoon
- Salt - 1/4 teaspoon
- Vanilla extract - 1 teaspoon
Steps
- Preheat the oven to 180°C (350°F) and line a baking sheet with parchment paper.
- In a large mixing bowl, combine the rolled oats, chopped walnuts, cinnamon, and salt.
- In a separate small bowl, mix together the melted coconut oil, honey or maple syrup, and vanilla extract until well combined.
- Pour the wet mixture over the dry mixture and stir until the oats and walnuts are evenly coated.
- Spread the mixture evenly onto the prepared baking sheet.
- Bake in the preheated oven for 20-25 minutes, stirring halfway through, until golden brown.
