  • Vegetable broth - 2 cups
  • Dried cranberries - 1/3 cup
  • Onion, finely chopped - 1/2 medium
  • Olive oil - 1 tablespoon
  • Salt - 1/2 teaspoon
  • Black pepper - 1/4 teaspoon
  • Cinnamon - 1/4 teaspoon
  • Chopped parsley - 2 tablespoons

Steps

  1. Rinse the basmati rice under cold water until the water runs clear, then drain.
  2. In a medium saucepan, heat the olive oil over medium heat. Add the chopped onion and sauté until soft and translucent, about 5 minutes.
  3. Add the rinsed rice to the saucepan and stir for 2 minutes until the rice is lightly toasted.
  4. Pour in the vegetable broth, then add the salt, black pepper, and cinnamon. Stir to combine and bring to a boil.
  5. Once boiling, reduce the heat to low, cover, and simmer for 15 minutes or until the rice is tender and the liquid is absorbed.
  6. Stir in the dried cranberries and cover again, allowing the mixture to sit for an additional 5 minutes.
  7. Fluff the rice with a fork, stir in the chopped parsley, and adjust seasoning if necessary before serving.
