- Salt - 1 teaspoon
- Black pepper - 1/2 teaspoon
- Olive oil - 2 tablespoons
- Onion - 1 medium, diced
- Garlic - 2 cloves, minced
- Fresh cranberries - 200g
- Maple syrup - 2 tablespoons
- Chicken broth - 1/2 cup (120ml)
- Dijon mustard - 1 tablespoon
- Thyme - 1 teaspoon, dried (or 1 tablespoon fresh)
- Parsley - for garnish, chopped
Steps
- Preheat your oven to 190°C (375°F).
- Season the chicken thighs with salt and black pepper on both sides.
- In a large oven-safe skillet, heat the olive oil over medium-high heat.
- Add the seasoned chicken thighs to the skillet and sear for about 4-5 minutes on each side until golden brown. Remove the chicken and set aside.
- In the same skillet, add the diced onion and minced garlic. Sauté for 2-3 minutes until the onion is translucent.
- Stir in the fresh cranberries, maple syrup, chicken broth, Dijon mustard, and thyme. Bring the mixture to a simmer.
- Return the chicken thighs to the skillet, nestling them into the cranberry sauce.
- Transfer the skillet to the preheated oven and bake for 20-25 minutes, or until the chicken is cooked through and reaches an internal temperature of 75°C (165°F).
- Remove from the oven and let it rest for a few minutes. Garnish with chopped parsley before serving.
