Ingredients

  • Chicken thighs - 4 pieces (about 500g)
  • Salt - 1 teaspoon
  • Black pepper - 1/2 teaspoon
  • Olive oil - 2 tablespoons
  • Onion - 1 medium, diced
  • Garlic - 2 cloves, minced
  • Fresh cranberries - 200g
  • Maple syrup - 2 tablespoons
  • Chicken broth - 1/2 cup (120ml)
  • Dijon mustard - 1 tablespoon
  • Thyme - 1 teaspoon, dried (or 1 tablespoon fresh)
  • Parsley - for garnish, chopped

Steps

  1. Preheat your oven to 190°C (375°F).
  2. Season the chicken thighs with salt and black pepper on both sides.
  3. In a large oven-safe skillet, heat the olive oil over medium-high heat.
  4. Add the seasoned chicken thighs to the skillet and sear for about 4-5 minutes on each side until golden brown. Remove the chicken and set aside.
  5. In the same skillet, add the diced onion and minced garlic. Sauté for 2-3 minutes until the onion is translucent.
  6. Stir in the fresh cranberries, maple syrup, chicken broth, Dijon mustard, and thyme. Bring the mixture to a simmer.
  7. Return the chicken thighs to the skillet, nestling them into the cranberry sauce.
  8. Transfer the skillet to the preheated oven and bake for 20-25 minutes, or until the chicken is cooked through and reaches an internal temperature of 75°C (165°F).
  9. Remove from the oven and let it rest for a few minutes. Garnish with chopped parsley before serving.
