  • Fresh cranberries - 150 grams
  • Carrot - 1 medium, diced
  • Celery - 1 stalk, diced
  • Onion - 1 small, chopped
  • Garlic - 2 cloves, minced
  • Chicken or vegetable broth - 500 ml
  • Olive oil - 1 tablespoon
  • Dried thyme - 1 teaspoon
  • Salt - 1/2 teaspoon
  • Black pepper - 1/4 teaspoon
  • Bay leaf - 1
  • Fresh parsley - for garnish

Steps

  1. Heat the olive oil in a large pot over medium heat.
  2. Add the chopped onion, diced carrot, and diced celery. Sauté for about 5 minutes until the vegetables are softened.
