- Bell pepper - 1 large, diced
- Zucchini - 1 medium, chopped
- Diced tomatoes - 400 grams (canned)
- Chicken broth - 500 ml (low sodium)
- Cumin - 1 teaspoon
- Paprika - 1 teaspoon
- Chili powder - 1 teaspoon
- Salt - to taste
- Black pepper - to taste
- Fresh cilantro - for garnish
Steps
- Heat olive oil in a large pot over medium heat.
- Add diced onion and minced garlic, sauté for 3-4 minutes until softened.
- Add the cubed coyote meat to the pot, browning it on all sides for about 5-6 minutes.
- Stir in the chopped carrots, bell pepper, and zucchini, cooking for another 5 minutes.
- Add the diced tomatoes, chicken broth, cumin, paprika, chili powder, salt, and black pepper. Bring to a boil.
- Reduce heat to low, cover, and let simmer for 40-45 minutes until the meat is tender.
- Taste and adjust seasoning if necessary.
- Serve hot, garnished with fresh cilantro.
