  • Coyote meat - 300 grams, cubed

  • Onion - 1 medium, diced
  • Garlic - 3 cloves, minced
  • Carrots - 2 medium, chopped
  • Bell pepper - 1 large, diced
  • Zucchini - 1 medium, chopped
  • Diced tomatoes - 400 grams (canned)
  • Chicken broth - 500 ml (low sodium)
  • Cumin - 1 teaspoon
  • Paprika - 1 teaspoon
  • Chili powder - 1 teaspoon
  • Salt - to taste
  • Black pepper - to taste
  • Fresh cilantro - for garnish

Steps

  1. Heat olive oil in a large pot over medium heat.
  2. Add diced onion and minced garlic, sauté for 3-4 minutes until softened.
  3. Add the cubed coyote meat to the pot, browning it on all sides for about 5-6 minutes.
  4. Stir in the chopped carrots, bell pepper, and zucchini, cooking for another 5 minutes.
  5. Add the diced tomatoes, chicken broth, cumin, paprika, chili powder, salt, and black pepper. Bring to a boil.
  6. Reduce heat to low, cover, and let simmer for 40-45 minutes until the meat is tender.
  7. Taste and adjust seasoning if necessary.
  8. Serve hot, garnished with fresh cilantro.
