- Ground bison - 250 grams
- Zucchini - 1 medium, diced
- Red bell pepper - 1 medium, diced
- Yellow onion - 1 small, chopped
- Garlic - 2 cloves, minced
- Canned diced tomatoes - 200 grams
- Olive oil - 1 tablespoon
- Cumin - 1 teaspoon
- Chili powder - 1 teaspoon
- Oregano - 1 teaspoon
- Salt - 1/2 teaspoon
- Black pepper - 1/4 teaspoon
- Cilantro - 2 tablespoons, chopped (for garnish)
Steps
- Preheat the oven to 180°C (350°F).
- In a large skillet, heat the olive oil over medium heat and add the chopped onion and minced garlic. Sauté for 3-4 minutes until the onion is translucent.
- Add the ground bison to the skillet and cook until browned, breaking it apart with a spatula, about 5-7 minutes.
- Stir in the diced zucchini and red bell pepper, cooking for an additional 5 minutes until they start to soften.
- Add the canned diced tomatoes, cumin, chili powder, oregano, salt, and black pepper to the skillet. Mix well and let it simmer for 10 minutes.
- Transfer the mixture to a baking dish, spreading it evenly.
- Bake in the preheated oven for 20 minutes.
- Remove from the oven and let it cool for a few minutes. Garnish with chopped cilantro before serving.
