Ingredients

  • Ground bison - 250 grams
  • Zucchini - 1 medium, diced
  • Red bell pepper - 1 medium, diced
  • Yellow onion - 1 small, chopped
  • Garlic - 2 cloves, minced
  • Canned diced tomatoes - 200 grams
  • Olive oil - 1 tablespoon
  • Cumin - 1 teaspoon
  • Chili powder - 1 teaspoon
  • Oregano - 1 teaspoon
  • Salt - 1/2 teaspoon
  • Black pepper - 1/4 teaspoon
  • Cilantro - 2 tablespoons, chopped (for garnish)

Steps

  1. Preheat the oven to 180°C (350°F).
  2. In a large skillet, heat the olive oil over medium heat and add the chopped onion and minced garlic. Sauté for 3-4 minutes until the onion is translucent.
  3. Add the ground bison to the skillet and cook until browned, breaking it apart with a spatula, about 5-7 minutes.
  4. Stir in the diced zucchini and red bell pepper, cooking for an additional 5 minutes until they start to soften.
  5. Add the canned diced tomatoes, cumin, chili powder, oregano, salt, and black pepper to the skillet. Mix well and let it simmer for 10 minutes.
  6. Transfer the mixture to a baking dish, spreading it evenly.
  7. Bake in the preheated oven for 20 minutes.
  8. Remove from the oven and let it cool for a few minutes. Garnish with chopped cilantro before serving.
