- Avocado - 1 medium, sliced
- Lettuce leaves (for wrapping) - 4 large leaves
- Red onion - 50 grams, thinly sliced
- Tomato - 1 medium, sliced
- Chipotle pepper in adobo sauce - 1 tablespoon, minced
- Mayonnaise (Paleo-friendly) - 2 tablespoons
- Garlic powder - 1 teaspoon
- Cumin - 1 teaspoon
- Salt - ½ teaspoon
- Black pepper - ½ teaspoon
- Olive oil - 1 tablespoon
Steps
- In a large bowl, combine the ground bison, garlic powder, cumin, salt, and black pepper. Mix until well combined, then form into 2 equal-sized patties.
- Heat the olive oil in a skillet over medium heat. Cook the bison patties for about 5-6 minutes on each side, or until they reach your desired doneness.
- While the patties are cooking, prepare the chipotle mayo by mixing the minced chipotle pepper with the mayonnaise in a small bowl.
- Once the patties are cooked, remove them from the skillet and let them rest for a couple of minutes.
- To assemble the burgers, place each bison patty on a lettuce leaf, top with sliced avocado, red onion, and tomato. Spread a generous amount of chipotle mayo over the top, then wrap the lettuce around the filling.
- Serve immediately and enjoy your Coyote Burger!
