Ingredients

  • Couscous - 1 cup
  • Water - 1 1/4 cups
  • Cherry tomatoes - 1 cup, halved
  • Cucumber - 1 medium, diced
  • Red bell pepper - 1/2, diced
  • Red onion - 1/4, finely chopped
  • Fresh parsley - 1/4 cup, chopped
  • Olive oil - 3 tablespoons
  • Lemon juice - 2 tablespoons
  • Salt - 1/2 teaspoon
  • Black pepper - 1/4 teaspoon
  • Feta cheese - 1/4 cup, crumbled (optional)

Steps

  1. In a medium saucepan, bring 1 1/4 cups of water to a boil.
  2. Stir in 1 cup of couscous, cover, and remove from heat. Let it sit for 5 minutes until the couscous absorbs the water.
  3. Fluff the couscous with a fork and let it cool slightly.
