- Couscous - 1 cup
- Water - 1 1/4 cups
- Cherry tomatoes - 1 cup, halved
- Cucumber - 1 medium, diced
- Red bell pepper - 1/2, diced
- Red onion - 1/4, finely chopped
- Fresh parsley - 1/4 cup, chopped
- Olive oil - 3 tablespoons
- Lemon juice - 2 tablespoons
- Salt - 1/2 teaspoon
- Black pepper - 1/4 teaspoon
- Feta cheese - 1/4 cup, crumbled (optional)
Steps
- In a medium saucepan, bring 1 1/4 cups of water to a boil.
- Stir in 1 cup of couscous, cover, and remove from heat. Let it sit for 5 minutes until the couscous absorbs the water.
- Fluff the couscous with a fork and let it cool slightly.
