Ingredients

  • cottage cheese - 200 grams
  • all-purpose flour - 100 grams
  • eggs - 2 large
  • milk - 100 ml
  • baking powder - 1 teaspoon
  • sugar - 1 tablespoon
  • salt - 1/4 teaspoon
  • vanilla extract - 1 teaspoon
  • butter - for cooking

Steps

  1. In a mixing bowl, combine the cottage cheese, eggs, milk, sugar, and vanilla extract. Whisk until well blended.
  2. In another bowl, mix the flour, baking powder, and salt together.
  3. Gradually add the dry ingredients to the wet ingredients, stirring gently until just combined. Do not overmix; a few lumps are fine.
  4. Heat a non-stick skillet over medium heat and melt a small amount of butter.
  5. Pour about 1/4 cup of the batter onto the skillet for each pancake. Cook until bubbles form on the surface, about 3-4 minutes.
  6. Flip the pancakes and cook for another 2-3 minutes on the other side, until golden brown.
  7. Repeat with the remaining batter, adding more butter to the skillet as needed.
  8. Serve warm with your choice of toppings, such as fresh fruit, yogurt, or maple syrup.
