Ingredients
- cottage cheese - 200 grams
- all-purpose flour - 100 grams
- eggs - 2 large
- milk - 100 ml
- baking powder - 1 teaspoon
- sugar - 1 tablespoon
- salt - 1/4 teaspoon
- vanilla extract - 1 teaspoon
- butter - for cooking
Steps
- In a mixing bowl, combine the cottage cheese, eggs, milk, sugar, and vanilla extract. Whisk until well blended.
- In another bowl, mix the flour, baking powder, and salt together.
- Gradually add the dry ingredients to the wet ingredients, stirring gently until just combined. Do not overmix; a few lumps are fine.
- Heat a non-stick skillet over medium heat and melt a small amount of butter.
- Pour about 1/4 cup of the batter onto the skillet for each pancake. Cook until bubbles form on the surface, about 3-4 minutes.
- Flip the pancakes and cook for another 2-3 minutes on the other side, until golden brown.
- Repeat with the remaining batter, adding more butter to the skillet as needed.
- Serve warm with your choice of toppings, such as fresh fruit, yogurt, or maple syrup.
