  • Olive oil - 2 tablespoons
  • Paprika - 1 teaspoon
  • Salt - 1/2 teaspoon
  • Black pepper - 1/4 teaspoon
  • Eggs - 2 large
  • Fresh parsley - 2 tablespoons, chopped (for garnish)

Steps

  1. In a large skillet, heat 1 tablespoon of olive oil over medium heat. Add the diced potatoes and cook for about 10-12 minutes, stirring occasionally until they are golden brown and tender.
  2. Add the diced onion and green bell pepper to the skillet with the potatoes. Cook for an additional 5 minutes until the vegetables are softened.
  3. Stir in the minced garlic, paprika, salt, and black pepper. Cook for another 1-2 minutes until fragrant.
  4. Add the diced corned beef to the skillet and cook for about 5 minutes, stirring until heated through and slightly crispy.
  5. In another pan, heat the remaining tablespoon of olive oil over medium heat. Crack the eggs into the pan and cook them sunny-side up or to your desired doneness.
