- Cornmeal - 100g
- All-purpose flour - 50g
- Baking powder - 1 tsp
- Salt - 1/2 tsp
- Sugar - 1 tbsp
- Milk - 150ml
- Egg - 1 large
- Butter - 30g, melted
- Collard greens - 200g, chopped
- Olive oil - 1 tbsp
- Garlic - 2 cloves, minced
- Vegetable broth - 200ml
- Red pepper flakes - 1/4 tsp
Steps
- Preheat the oven to 200°C (400°F).
- In a mixing bowl, combine the cornmeal, flour, baking powder, salt, and sugar.
- In another bowl, whisk together the milk, egg, and melted butter.
- Pour the wet ingredients into the dry ingredients and stir until just combined.
- Grease a small baking dish and pour the cornbread batter into it.
- Bake in the preheated oven for 20-25 minutes, or until golden brown and a toothpick comes out clean.
- While the cornbread is baking, heat olive oil in a large skillet over medium heat.
- Add the minced garlic and sauté for 1-2 minutes until fragrant.
- Add the chopped collard greens and stir for a minute before adding the vegetable broth.
- Cover and simmer for 10-15 minutes until the collards are tender, adding red pepper flakes for heat.
- Once the cornbread is done, remove it from the oven and let it cool for a few minutes before slicing.
- Serve the cornbread warm alongside the collard greens.
