Ingredients

  • Cornmeal - 100g
  • All-purpose flour - 50g
  • Baking powder - 1 tsp
  • Salt - 1/2 tsp
  • Sugar - 1 tbsp
  • Milk - 150ml
  • Egg - 1 large
  • Butter - 30g, melted
  • Collard greens - 200g, chopped
  • Olive oil - 1 tbsp
  • Garlic - 2 cloves, minced
  • Vegetable broth - 200ml
  • Red pepper flakes - 1/4 tsp

Steps

  1. Preheat the oven to 200°C (400°F).
  2. In a mixing bowl, combine the cornmeal, flour, baking powder, salt, and sugar.
  3. In another bowl, whisk together the milk, egg, and melted butter.
  4. Pour the wet ingredients into the dry ingredients and stir until just combined.
  5. Grease a small baking dish and pour the cornbread batter into it.
  6. Bake in the preheated oven for 20-25 minutes, or until golden brown and a toothpick comes out clean.
  7. While the cornbread is baking, heat olive oil in a large skillet over medium heat.
  8. Add the minced garlic and sauté for 1-2 minutes until fragrant.
  9. Add the chopped collard greens and stir for a minute before adding the vegetable broth.
  10. Cover and simmer for 10-15 minutes until the collards are tender, adding red pepper flakes for heat.
  11. Once the cornbread is done, remove it from the oven and let it cool for a few minutes before slicing.
  12. Serve the cornbread warm alongside the collard greens.
